Could someone point me in the rigt direction for finding out which wire is which.
From the black box and into the engine area I have....
Red wire = manifold heater?
Blue and black wire ?
Brown and black wire?
Black wire?
Red and yellow wire?

Big Fat red on the screw terminal?
The main connection for battery live circuits in the engine bay.
And manifold pre-heater relay for carb models.

Blue / Green - coolant shortage switch.
Red/ Black - 50 terminal (starter).
Black / grey - reverse lights

Not had chance to work on the van in months and left the engine wiring in a state I now no longer remember
From the black box I have a group of wires that are the trouble, there covered in a black outer sheath with the above mentioned wires.
See if I can now get them in the right place now

I can give a rough listing.
Lights - normally via a 7 pin plug.
T7/1 - black / white - left indicator
T7/2 - black / green - right indicator
T7/3 - black / red - brake lights
T7/4 - grey / white - rear fogs
T7/5 - grey / black - tail light left
T7/6 - grey / red - tail light right
T7/7 - brown - ground for rear lights.
Grey / green - number plates
Black / blue - reversing lights (switch to lights)
Black / grey - reversing lights (switch to body loom)
Sensors
In order of 7 pin plug on later vans.
1 -Blue / black - 0.3 bar oil pressure switch
2 - Yellow / red - coolant gauge sender
3 - Blue / green - coolant level switch
4 - Brown - sender units common ground
5 - Green - rpm signal
6 - Red / black - 50 terminal supply (starter)
7 - Yellow (later engines only) - higher oil pressure switch
Others
Blue - battery charge light signal (61)
And the obvious -
Red - Battery Live (30) - manifold pre-heater relay
Black - Ignition Live (15) - coil and associated circuits
Brown - Chassis / Ground / Earth (31).

It is probably well worth getting wiring diagrams for your van to help with your refurbishment.
There is s chap on ebay who does coloured schematics for the early vans.
And there are a few official VW diagrams knocking about.
In my opinion, Haynes is too vague...
And Bentley can be a bit confusing with the wire size notation. They use swg (standard wire gauge) and the rest of the "civilised world" uses mm csa (cross sectional area).
And there are some wiring differences between different countries.
I suppose, not an issue unless you are just fault finding or refitting wiring.
Vitally important if you are repairing or modifying an existing loom.
