Just fitted a set of carat alloys which came with all the original wheel bolts/nuts fronts were fine the rears fit but after tightening them up there is still a lot of thread on the nuts that is not being used see picture.
Is this ok/safe or do I need to change anything?

Nope that is not safe.
You may have the incorrect nuts, what face do they have (radius or cone)?

Steel wheel nuts have radius and the carats have cone.

Those nuts do not look like they have 7 turns engaged.

Have you got the wheels sat on the hubs correctly, make sure that they are not sat on the two small bolt heads.

My van has atiwe alloys and nuts/bolts fitted by vw from new, an alarming length of thread is unused on the nuts, but that's what vw did - they've been fine for 20 odd years and torque up properly. As above check they are tapered nuts/bolts and you can get 7 or more turns on them. If in doubt get a extended stud conversion kit from Brickwerks.

Below is a picture of the wheel with the nut removed and one of the actual nut which I believe is genuine?
I get 8 turns when I tighten the wheel up but there is still thread on the nut that is not being used any help or advice would be much appreciated.

It's all as VW intended, the nuts originally had caps on so you couldn't see the exposed thread and be alarmed.

If you're getting 8 turns then it's safe.
As above, ignore the rest.

Got black ones on mine.Never come across silver ones.

Brickwerks have started selling nice repro stock wheel nuts

If you're van originally had steel wheels you will need longer wheel studs that need to be pressed in the rear hubs, also the front wheel bolts need to be longer. There is a fitting guide on brickworks web site that is very helpful and they sell all the gear.

Factory fitted alloys came with the same studs as standard steels. Nuts and bolts have tapered seats.

Yes although it's all fine, it sure does look alarming when you see it.
I think VW should have given this a little more thought.

Can you still get the cover caps??

The VAG part number for the complete nut is 255 601 143, discontinued in 2009(?), it seems unlikely that the caps are available - best bet would be to replace the nuts with the ones sold by brickwerks:
