T25 Westfalia high top, I had the bodywork done and I'm putting the internals back in. Do I put rockwool behind the fridge or leave the area clear?

Please, please throw away the Rockwool. It holds moisture and will quickly rot out your bodywork. Yes some people get away with it, but many more don't.
Use something else, we used a combination of pipe lagging foam, self adhesive neoprene and the foil bubble wrap. I would also insulate the panel behind as the heat from the fridge will condense on the cold metal and moisture will run down. Better to vent the warm air away instead. If your fridge is gas it will produce a lot of moisture.
